This is not a Thanksgiving recipe. I echo: This is not a Thanksgiving recipe.

You've probably already figured that out past now.

I was cooking my Thanksgiving recipes yesterday–chopping and rinsing and brining–and out of the blue, I knew.

I knew.

It came to me in a vision. I saw it written on a bright white wall. "Ree," the bright white wall read. "Y'all must make beefiness with snowfall peas. It is your destiny."

I take long since stopped trying to ignore visions of words written on bright white walls. Every fourth dimension I follow what the words on the wall tell me to practice, things take always worked out okay in my life!

What about you guys? How often do you exercise what the bright white wall tells you to do?

Oh. You don't see visions of words written on bright white walls?

Never mind.

Let'due south but brand the beef with snow peas and forget this ever happened…okay?

My favorite meat for stir fry is flank steak, considering it remains so, so tender when you slice it very thin. And the flavor is totally astounding. With a very sharp knife–cut it into very thin strips. You'll want to slice against the grain, slightly on a diagonal (rather than a ninety caste angle to the grain.)

Wait at that beautiful, cute beef. Pure, unadulterated, and perfect.

Yep, I'one thousand married to a cattle rancher. Why do yous ask?

Take hold of some soy sauce. I used regular, simply if you have low-sodium, information technology's a smarter selection

Some sherry…(either cooking or regular sherry is fine.)

Image (6) 5112230456_4b2a7c01b9_z.jpg for post 10922

Brown sugar. 'Cause a lilliputian sugariness is and so dang good in situations like this.

Image (7) 5112239300_86f512a175_z.jpg for post 10922

Some minced fresh ginger. There's zilch in the globe similar information technology.

Sometimes I slice the skin off of ginger, accept a large whiff, and can't believe what I've just experienced. I have like reactions when I smell:

Rosemary
Cilantro
Lemongrass

I close my optics and want to die from bliss when these scents enter my globe.

And some corn starch.

Image (9) 5112228596_e335e93e27_z.jpg for post 10922

Add the soy sauce to a medium-sized basin…

Image (10) 5111625831_780224b31a_z.jpg for post 10922

Then pour in the sherry…

Image (11) 5112249730_878fa6ea69_z.jpg for post 10922

Dump in the brownish sugar…

Image (12) 5111643613_f2166d067f_z.jpg for post 10922

And the ginger.

And angels sang from the heavens.

Did you hear that?

At that place it is once again!

Image (13) 5112223238_9a6dc7fdf7_z.jpg for post 10922

Finally, the cornstarch. It'll requite the dish a wonderful, fabled, sauciness.

Image (14) 5112238080_9e6034c6fa_z.jpg for post 10922

Stir this together with a fork until information technology all dissolves.

Image (15) 5111648507_517a8d6652_z.jpg for post 10922

Throw the sliced meat into the bowl…

Image (16) 5111628555_d49b3abfc6_z.jpg for post 10922

And toss it with your hands.

Of import Note: If you adopt, cascade one-half the marinade into a carve up basin to be used in the stir fry afterward.

Take hold of a bunch of snowfall peas. Some folks like to pare off the strings equally they would with sugar snap peas…

But that's really too much work for me. So I just line up a few at a time and lop off the tops and bottoms.

And I don't care who knows information technology!

Image (18) 5111641617_2a2467975b_z.jpg for post 10922

Side by side up, slice upwards some scallions, otherwise known every bit greenish onions. Simply lop off the tops, then cut them into half-inch pieces on a diagonal.

Finally, cook some rice. This is jasmine, but you tin can do regular long grain or brown rice. Whatever makes your brim fly upwards!

Jasmine rice: ane cup of rice, 2 cups of water, 1/iv teaspoon salt. Bring it to a boil. Reduce the heat to a simmer and cover. Cook for 15 minutes. Turn off estrus, leave it covered for ten more than minutes. Poifect, poifect rice, infant.

Poifect.

Time to cook everything: Heat 3 tablespoons of oil in a very heavy skillet or wok over loftier rut. IMPORTANT: The oil must be very, very hot! Throw in the snowfall peas and stir them effectually for less than a minute. You lot want them to stay crisp.

Image (21) 5111647229_541ea813c0_z.jpg for post 10922

Remove them from the pan. Let the pan get very hot over again. It's essential that the skillet be hotter than Hades.

Image (22) 5112241864_24cef48114_z.jpg for post 10922

Utilize tongs to grab half the meat…

Image (23) 5112232222_d910d5e78c_z.jpg for post 10922

Throw it into the very hot pan, beingness careful to spread the meat out into a single layer every bit you add it. Important: Don't start stirring/moving the meat around; let it stay right where you put information technology for a good infinitesimal. That'll help requite information technology some really overnice color, which is what life is all most. The skillet should exist then hot that the meat sizzles violently.

I have no thought what that just meant.

Image (24) 5112238702_0c0b79c154_z.jpg for post 10922

Throw in half of the scallions, too.

Image (25) 5112237526_ff5b0cc01c_z.jpg for post 10922

After a minute or so, kickoff turning over the meat and then information technology'll brown on the other side.

Image (26) 5111636131_cca7653f5e_z.jpg for post 10922

Later another 30 to 45 seconds (or when the other side starts to get brown) remove the meat from the pan and set it on a clean plate.

Image (27) 5112245390_6471091d18_z.jpg for post 10922

Repeat with the other half of the meat and the other half of the scallions, the latter of which I plum forgot the add to the pan.

But I've forgiven myself.

Image (28) 5112226148_073ccd1640_z.jpg for post 10922

Turn it over and melt it for xxx seconds…

Image (29) 5111630195_0dd7148c15_z.jpg for post 10922

Then dump the balance of the meat (and all the delicious juices) into the pan…

Image (30) 5111650921_cdbc10c330_z.jpg for post 10922

Along with the snowfall peas. Yum!

Image (31) 5112251000_7f8b37e733_z.jpg for post 10922

Give information technology a quick stir…

Image (32) 5111646701_a2633f63c9_z.jpg for post 10922

And pour in the rest of the sauce/marinade. Y'all don't want any of the goodness to become to waste.

Image (33) 5111633327_0615323633_z.jpg for post 10922

Stir it around until it bubbles upwardly and boils, then become ahead and plough off the heat. The sauce will still melt and thicken and become wonderful.

(Notation: It does not bother me to boil the same liquid that was used for the meat, but if yous poured off half the liquid before soaking the meat, just pour the actress liquid in here.)

Image (34) 5111645171_6bd58f0d5f_z.jpg for post 10922

Done! Only dump it all onto a serving platter…

Image (1) 5112225022_e4d9aef755_z.jpg for post 10922

Then, for a little spice, sprinkle on some cherry-red pepper flakes.

Serve the platter on the dinner table with a large serving basin of rice.

Image (35) 5111627909_250cc54f05_z.jpg for post 10922

Yep. It'south official.

I'm happy.

Enjoy this, guys! It really is a simple stir fry recipe that can be adjusted in whatever number of ways: use craven instead of beefiness, change upwards the vegetables…annihilation goes. Only make sure you lot let the pan become very hot before adding the ingredients!

You lot'll dear information technology.
